2024 Sangiovese, Ambyth Vineyard

$46.00

From the Ambyth Vineyard in the Templeton Gap, certified Biodynamic from its conception, the vines are head trained and dry farmed on a steep hillside. This appellation is slightly cooler than the surrounding areas because the air from the Pacific Ocean filters through the Santa Lucia Mountains and is pulled into the Creston Valley. The soil is an ancient substrate of sedimentary rock and deposits of limestone, sandstone, calcareous clays, and clay loam, a mixture known as Linne Calodo.

Fermented with 66% whole cluster and left on skins for 23 days. Fermented with native yeast and aged on lees for 11 months in a 300 liter neutral oak barrique. Bottled unfiltered and unfined with minimal sulfur. Made with intention and love.

Red cherry, white chalk, fresh spruce tips, strawberry rhubarb and pink peppercorn
